What's for Dinner? Cupboard Casserole

What are you having for dinner tonight?  Not know just yet?  I challenge you to go open your cupboard doors and create something tasty:)  Making something out of nothing is my favorite type of cooking.  Just have a basic idea in your mind and build as you open each door, you may just make a new family favorite! Tonight this happened for me.  Remember: if you are using a recipe it can always be altered to what you have or what yo like! Don't like turkey?  use beef etc.
Ingredients:
2 cups uncooked Elbow pasta
1 pkg Turkey Kielbasa
1 onion
1 can diced tomatoes
1 can fat free cream of mushroom soup
1/2 cup of shredded low fat cheddar cheese
garlic, salt, pepper, paprika, and any other spices your belly desires

cook pasta as directed: I always add a dash of olive oil to prevent pasta sticking together
preheat oven to 350

While your pasta is cooking chop onion and turkey sausage up and saltee until onion is soft
Add diced tomatoes and bring to a boil
Add spices to taste
Poor pasta, cream of mushroom, 1/4 cup cheese & turkey sausage mixture into large bowl and mix

Poor mixture into baking dish, top with remain cheese
bake for 15 minutes or until cheese is melted


Scoop up and enjoy!

  1. Casseroles are great. I love being able to throw everything into one dish. Less mess! :)

    I ended up eating leftover vegan taco salad last night. I was feeling a little under the weather and didn't want to be bothered with cooking! :)
