3 Minute Trail Mix

I made some homemade trail mix for our trip to Memphis and it turned out to be pretty dang tasty so I thought I'd share it with you. It literally takes 3 minutes! You can feel free to omit or substitute any of the ingredients and it will turn out just fine.

You will need..
shelled pistachios
sliver almonds
whole raw almonds
dry roasted peanuts
craisins
golden raisins



Simply pour desired amount of eat in a large ziplock bag and shake!
Enjoy!

To sweeten it up a bit you can add chocolate chips, peanut butter chips or M & Ms :) If you are trying to keep it on the healthy side stick to different types of nuts and dried fruits and opt for dark chocolate chips!

Dirty Girl Mud Run: Memphis

Like I said in my previous post, this past weekend was a blast! Along with exploring Memphis we ran in a charity obstacle 5k run called the Dirty Girl Mud Run. The proceeds went to breast cancer research and is for girls only..no boys allowed:) This run was different than any other I have done in the fact that it had 12 obstacles and 5 mud pits to crawl through! We lucked out and had sunny, 74 degree weather for the run. After the run we had a little picnic in the grass:) I am really liking all the themed and adventure runs that are popping up everywhere. Memphis Weekend

This past weekend three of my favorite friends (Ashley, Holly and Kristin) and I journeyed south to Memphis, TN for a weekend of fun, lots of laughter, mud (more in that later), and much much needed quality time together! I've known these pretty girls for well over half my life and am glad that we are still close! This trip was just downright good for my sole. It's nice to take a break from the everyday stresses and just enjoy a new place with people you love. The main reason we went to Memphis was to run the Dirty Girl Mud Run, which totally deserves its own post so it will be coming right up! Green beer, Beale Street, crazy carriage ride, beautiful weather, and much more made up a pretty great weekend! Here is our trip in pictures....





































Another big plus was that it was St. Pattys Weekend! Green everywhere!

Homemade Granola Bars

Granola bars are an easy go to snack for all of us busy bees however, they can secretly pack just as much sugar as a candy bar along with secret mystery chemicals. So be careful and read the label or just make your own at home! These have no added sugar, no flour, dairy free and no mystery ingredients:)

You will need:
2 cups oats
1/3 cup natural peanut butter
1/2 cup slivered almonds
1/3 cup honey
2 T Cinnamon
1 t vanilla
3 ripe bananas
Optional: flax seed, chia seeds



Preheat oven to 350
Mash bananas in medium bowl
Add cinnamon, vanilla, peanut butter and honey to bananas
In separate bowl combine oats and almonds
Stir oat mixture to wet ingredients
Spread onto greased cookie sheet



Bake for 25 min



Cut into rectangles and enjoy!



Feel free to add raisins, craisins, choc chips, or any other yummy goodness to these tasty bars! You can substitute the pb for almond or cashew butter!

Hidden Nature

On Sunday Johnny and I decided to check out Wesselman nature area here in Evansville. We found it online when searching for outdoorsy stuff nearby to do in the upcoming spring weather. We discovered that it is a nice little hidden jewel that we will be visiting a lot in the upcoming months:) They have hiking trails, a loop to run on, canoeing, places for a picnic and a little recycle center. We took a short 20 minute hike to see what it was like and it was surprisingly peaceful considering it is so close to the expressway. Birds chirping and the smell of fresh air was a nice way to start a Sunday afternoon. We finished up with a 30 min jog. We are really looking forward to trying out the canoeing that they offer!

New Running Buddy

For the past month and a half or so Johnny and I have been running 2-3 times a week. Running is one of my very favorite outdoor activities and now that Johnny comes along I love it even more! I am loving my newest running buddy:) Johnny has some knee problems that have always prevented him from picking running up. He's been taking glucosamine and we have gradually increased our distance. I think last time we tried this he did too much too quick. I'm keeping my fingers crossed he is able to continue. I am running my first obstacle mud run in 2 weeks with a few of my close friends and I can not wait! It's been awhile since I've ran in an organized run so I'm getting pretty stinkin excited! I snapped a few pics during our chilly running sessions...
