Mini Cheddar Poppers

Need something healthy to take to a luncheon or get together? I've got a super quick and easy snack for you! I found the recipe/idea on Pinterest but I wanted to share it with y'all!



All you need is a bag on mini bell peppers and your choice of cheese, I used Sargenta sharp cheddar cheese sticks. I think pepper jack would be yummy!



I got these adorable peppers at Target but I've seen them at Walmart as well!



Just cut a hole in the side, dig out the seeds, rinse and save your scraps for later:)



Stuff with cheese ( feel free to use shredded cheese if thats what you have) and cook for about 10 min on 400 or until cheese is melted!



In just about 15 min total they are ready to enjoy!
Now chop up your scraps for a salad or omelet the next day!

Paleo Approved Meatloaf

One of my favorite times to cook is when Johnny comes home from being gone on a work trip. Nothing says welcome home honey like the smell of meatloaf in the oven! Tonight I decided to go caveman style with my meatloaf:) There are tons of Paleo style meatloaf recipes floating around the Internet so I decided to make my own. So lets make a meatloaf!



You will need:
1 lb lean ground beef (get local if you can)
1 cup almond meal
1 egg
1/4 onion chopped
1/4 cup bell peppers ( use any color, I used green, red, yellow, and orange:)
1/2 can tomato paste
1 tsp sage
1/2 tbsp garlic
Bake for 50 minutes on 375

The Color Run Louisville

Last fall a few of my friends from work and I decided to try out The Color Run in Nashville, TN to see if it would be as much fun as it looked from all of the pictures and videos we had seen, well it was!! We liked it so much we decided to do it again! Same race, different city, and more girlies to join the fun:). We picked Louisville, KY for our second Color Run experience. Boy am I glad I was able to join the fun! With gorgeous weather, a pretty city and a group of crazy awesome friends we enjoyed the run to the max! The night before was spent picking up our sweet tshirts and goodie bags followed with a night of fun at 4th street live! I highly recommend getting a group of friends or family together and get colorful!

Lovin this Weather

Since the weather started to warm up it has been fabulous here in IN/KY! I've had a week off from work and I've spent lots of my time outside! Running, walks with friends, swimming, laying out and eating outside (which I seriously love to do for some reason). I'm looking forward to all the summer outdoor activities in the near future! Last night Tara, Nathan, Alex and I headed to Lake Barkley for a mini getaway:) We swam, danced, laughed (a lot) had summery drinks and relaxed! Anytime I'm with my siblings I have fun, so it's no surprise to me that I feel reenergized and refreshed after spending time with them. Johnny was gone working for 7 days and 6 nights (not that I was counting or anything) and hanging with such good company helped keep me from missing him so dang much! He got back today so I'm a happy girl:) How are you kicking off your summer?

Tara bought us these adorable cups to drink out of! Yes, I am drinking beer with a straw. I love that they are red and blue because they will be totally awesome on the 4th next month! Thanks again Seester!






After a fun little night I woke up to yet another gorgeous day so I..



Went straight to the dock to soak up the sun, listen to some music and paint my fingernails with the most perfectly named nail polish for today..bikini so teeny!



Finished up my time at the lake with a little run for National Running Day!
I've still got a week of time off so I look forward to enjoying the outdoors!
