St. Louis for the Day

This past Wednesday my Dad, brother (Nathan) and I took a mini road trip over to St. Louis, MO. Going anywhere through the week always feels like the weekend but you keep the perks of less traffic and fewer people at restaurants! Nathan is a big Cardinals fan and we have been trying to plan a trip to see a game all season but it just hadn't worked out until now:). Ideally the rest of our family could have gone too but they simply could not get off:/ So it was just dad and the twins!
We started the day checking out the arch...

It was a hot one! So I was shade chasing all day:)


After a couple hours in the sun we were ready for air conditioning, food and cold beer! Nathan recommended this place called Pi, it was sooo good! I highly recommend it myself!

Unfortunately the Cards got stomped but the game was still a blast! O yeah and we had awesome seats, front row center field:)

First Day of School...what?

Still sounds sort of weird to me to say that my classes start today. Probably because its been years since I've taken a class!
Today starts a new journey...Grad school. I am going back to get my Masters in Nursing Education. So, today I'm getting back into the grove of things and planning out the semester, here's to a good first semester!!






At least I have a little helper hanging around:)

Lexington Love

Last weekend Tara and I went to visit one of my bffs in Lexington, KY. It was a much needed Seester adventure. Lots of laughs, drinks, and catching up! I always enjoy going to Lexington because Ash is such a good little host and always takes us to neat little places around town! My favorite meal of the trip was at a place called Shakespeare, it was totally adorable, I had blueberry pancakes and a tasty mimosa to start the day:)



After a good brunch and some morning drinks we headed to the Woodland Art Fair which was packed with talented artists of all kinds selling their goodies. I can't wait to have a house so I can actually want to buy things to decorate the place!





I miss you already Ash! Can't wait to see you in a couple of weeks!

Egg Muffins

Good morning muffin:)
Today I decided to try out my own version of the little egg muffins I've seen here and there on Pinterest. There are lots of variations with time to cook, oven temp and ingredients on there. I want to share how I made mine!
You will need:
-7 eggs
-3 egg whites
-1/8 onion (chopped)
-1/2 bell pepper (chopped)
-4 pieces sliced deli turkey
-1 tsp Greek seasoning


Preheat oven to 350
Beat eggs in a large bowl
Add veggies and seasoning to eggs
Double line your muffin tin and spray with non stick spray
Tear your turkey into small pieces and line the bottom of each muffin cup
Pour egg/veggie mixture on top of the turkey
( only fill about 2/3 full)
Bake for 20 min

ENJOY!


Feel free to stick the leftovers in the fridge for a couple days!
Just heat them up in the microwave for a quick little breakfast!



I used what I had in my fridge so be creative with what you have available! You can use zucchini, spinach, mushrooms etc! Season to your tasting! Bacon or ham would be tasty too!

Germanfest 2013

This past weekend was my third time partaking in German festivities at Vincennes, IN Germanfest! It's become a bit of a summer tradition. My dad, seester and hubby
packed our bags and headed a little North to my parents hometown of Vincennes. Friday is always my favorite night because its a little less crowded and everything is new (again:) Cold beer, delicious German food, polka music and spending time with some of my favorite people makes for a pretty great weekend.

No Bake Truffles

Made from real ingredients and no added sugar or dairy!
Are they low calorie? Not so much.
Are they low fat? Definitely not.
Are they free from crazy fake ingredients? YES!
Annnd they are delicious!



You will need:
1/2 C Natural Peanut Butter
1/2 C Raisins
1/4 C Peanuts
1/2 tsp Vanilla
4 Tbsp Cocoa Powder
1/4 Tsp Sea Salt

Throw all ingredients in a blender, roll into balls and ENJOY!

New Car!

We got a new car! Eek! It's been a long time since I've said those words. About a month ago Johnny and I began the search for a new vehicle for Johnny, it was time for a new ride! His main concern was getting a car with good gas mileage. We had narrowed it down to the ford focus sedan or hatchback and the Toyota Prius. We loved the Prius but with trying to save for a house (yay) we decided we needed to get something a little cheaper so we found a 2012 Ford Focus, with low miles, we wanted to test drive. We headed to Owensboro in hopes we had found our new car. After seeing it in person and test driving it, we decided it just wasn't for us. This car was at a Hyundai dealership, since it was used, so we decided to look around the lot and quickly found 3 or 4 cars we really liked. I'd never really thought about Hyundai before to be honest, so I checked it online as we test drove our favorite on the lot, liked what I saw online, and we loved the way it drove, the avg 40 mpg and the price;) A couple hours later we were the proud new owners of a new 2013 Hyundai Accent Hatchback!



We celebrated with a date to get sushi and frozen yogurt!


Johnny was sad to see his old truck go but he is quickly getting used to the change!
