Nuts for the Season: Roasted Pecans

Chilly weather just screams..roast something in the oven!  So I made some cinnamon brown sugar pecans:) Super simple and super scrumptious!


You will need...

3 cups pecans
1 egg white
cinnamon
1 tsp vanilla
brown sugar
sea salt (optional)


Preheat oven 300

pour egg white over pecans, stir and  coat evenly
add vanilla and stir
sprinkle cinnamon, brown sugar & seat salt into bowl and mix
spread out onto a greased cookie sheet
bake for 20 min
ENJOY!

Be ready for your home to smell amazing!!

Chocolate Lucky Charms Treats

These treats are easy as 1, 2, 3...

You will need:
3 Tbsp. of butter
1 10 oz. bag of mini marshmallows
6 1/2 cups of Chocolate Lucky Charms (almost a whole box)

 

Grease 9x13 dish
1. Melt butter in large saucepan, add mini marshmallows and stir until completely melted
2. Remove from heat and stir in Lucky Charms
3. Press into greased dish, let them sit and cool for about 20 min, cut and enjoy!

Christmas 2013

Christmas was so nice this year!  Lots of family and friend time! I took the tree down today and packaged up all my Christmas cheer but only until next year:) I hope everyone enjoyed the holiday season!

Egg Muffins

Good morning muffin:)
Today I decided to try out my own version of the little egg muffins I've seen here and there on Pinterest. There are lots of variations with time to cook, oven temp and ingredients on there. I want to share how I made mine!
You will need:
-7 eggs
-3 egg whites
-1/8 onion (chopped)
-1/2 bell pepper (chopped)
-4 pieces sliced deli turkey
-1 tsp Greek seasoning


Preheat oven to 350
Beat eggs in a large bowl
Add veggies and seasoning to eggs
Double line your muffin tin and spray with non stick spray
Tear your turkey into small pieces and line the bottom of each muffin cup
Pour egg/veggie mixture on top of the turkey
( only fill about 2/3 full)
Bake for 20 min

ENJOY!


Feel free to stick the leftovers in the fridge for a couple days!
Just heat them up in the microwave for a quick little breakfast!



I used what I had in my fridge so be creative with what you have available! You can use zucchini, spinach, mushrooms etc! Season to your tasting! Bacon or ham would be tasty too!

No Bake Truffles

Made from real ingredients and no added sugar or dairy!
Are they low calorie? Not so much.
Are they low fat? Definitely not.
Are they free from crazy fake ingredients? YES!
Annnd they are delicious!



You will need:
1/2 C Natural Peanut Butter
1/2 C Raisins
1/4 C Peanuts
1/2 tsp Vanilla
4 Tbsp Cocoa Powder
1/4 Tsp Sea Salt

Throw all ingredients in a blender, roll into balls and ENJOY!

Overnight Oats: Banana and PB

This is my third time making overnight oats and I have found a combo I really like! You can make overnight oats in any type of jar or bowl but I like using an empty peanut butter jar! There are a ton of combos you can create but I want to share my favorite with you:)

You will need:
-empty peanut butter jar
-1/4 C instant oats
-almond milk
-1Tbsp chia seeds
-1/4 banana (sliced very thin)


Pour your oats, chia seeds and banana into empty peanut better jar
Cover ingredients with almond milk
Put the lid on tight and shake
Place in the fridge overnight


Wake up, spoon into a bowl and heat up for about 30 seconds in the microwave
Enjoy!

S'mores Bites

Who doesn't like s'mores? I'm sure there's someone right now thinking, well I don't:) If you are part of the s'mores loving community this simple little recipe will make you smile! So let's get started...
You will need:
-Box of graham crackers
-Bag of marshmallows
-Bag of your personal fav bite size chocolate candy (we used Hershey kisses and mini Reese's cups)


Preheat oven to 300
Place graham crackers and marshmallows on a cookie sheet
Bake until marshmallows look like they are starting to melt (took ours about 8min)
Take out and top with candy, pop back in the oven for a few minutes
Enjoy!



While these aren't a healthy snack they are a nice healthy option to a regular s'more! I look forward to making these this fall!

Breakfast, Dessert or Snack Cookies

Happy July everyone:)
It's that time of year for camping trips, cookouts and summer get togethers! I want to share a super healthy cookie that is easy to grab for breakfast on the go, pack for a trip, or perfect for a yummy dessert at a cook out!
Egg free, sugar free, and dairy free!

Your will need:
2 ripe bananas
3 Tbsp coconut oil
1/4 c honey
2 tsp cinnamon
1/4 c natural peanut butter
1 1/2 c oats
1/4 c raisins
1/4 c dried blueberries
1/4 c peanuts

Lets get started!



Preheat oven to 325
Mash bananas in large bowl
Add coconut oil, cinnamon, honey and peanut butter to bowl, stir until mixed well
Add peanuts, dried blueberries and raisins to mixture
Add oats and stir until mixed well
Bake for 20 min
Enjoy!

Feel free to substitute the peanut butter for any natural nut butter of your choice.
Also use any nuts or dried fruits your belly may desire:)

Mini Cheddar Poppers

Need something healthy to take to a luncheon or get together? I've got a super quick and easy snack for you! I found the recipe/idea on Pinterest but I wanted to share it with y'all!



All you need is a bag on mini bell peppers and your choice of cheese, I used Sargenta sharp cheddar cheese sticks. I think pepper jack would be yummy!



I got these adorable peppers at Target but I've seen them at Walmart as well!



Just cut a hole in the side, dig out the seeds, rinse and save your scraps for later:)



Stuff with cheese ( feel free to use shredded cheese if thats what you have) and cook for about 10 min on 400 or until cheese is melted!



In just about 15 min total they are ready to enjoy!
Now chop up your scraps for a salad or omelet the next day!
