Oatmeal Blackberry Muffins

I have the perfect healthy summer muffin for you to try.  I used blackberries but you can use strawberries, blueberries or any other fruit you desire really.  The recipe makes 12 muffins. Make sure you spray your muffin tins or you will be sorry:) 
You will need:
1 1/4 C Oats
3/4 C low fat vanilla yogurt
3/4 cup Naked drink (I used Strawberry/ Banana)
1 1/4 c whole wheat flour
1/3 c sugar
1 T baking powder
1/4 t baking soda
1 1/2 t cinnamon
1/2 c blackberries cut in halves
1 tsp vanilla
2 egg whites
Let's get started...
Preheat oven to 350
Mix oats, yogurt, Naked juice, and vanilla in one bowl
In a separate bowl mix flour, baking soda, baking powder, sugar and cinnamon and stir to mix
Now combine both bowls of ingredients and add egg whites and blackberries, mix well
Spoon mixture into greased cupcake tins
Bake for 15-17 minutes

My family journeyed to Evansville to celebrate my Mom's birthday today;) I love having everyone together! We had dinner at a local restaurant, The Hornets Nest and a fruit tart for dessert.

The Class of 2002 Reunites!!

Yesterday was my 10 year high school reunion!  I still can't believe it has been 10 years since we graduated and after last night it seems even more surreal.  With some people it was like no time at all had passed and were just hanging out on a Saturday night:)  It was nice to see everyone and here how things have changed or not changed.  The girls who organized the reunion did a great job and threw a super fun party!  Last night was mixed with excitement and emotions.  I actually teared up, well cried a little, when I was telling one of my old friends bye.  Sometimes I can be such a dork. I really enjoyed the night and if you are from my class and are reading this I hope you did too!!

Cucumber & Dill Salad

Good morning:) I have a quick and easy summer recipe for you today!  There are so many different variations of cucumber salad out there but I am going to share with you the one my mom always made when I was growing up. A sweet friend at work brought in some of her homegrown cucumbers and the first thing I thought of was this recipe. 
All you need is..
2 Cucumbers
1 onion
White vinegar
Sweetener of choice
Dill
Salt
First slice your cucumber, place in strainer and sprinkle salt over cucumbers
Let sit for about 30 min.
Rinse well with water

Next pour about 1/2 cup or so of vinegar into a bowl and add sweetener
The proportion will be different for each person's personal taste so just keep adding sweetener until you like the taste
Once you get the desired taste, add chopped onion, cucumbers and dill
Chill and Enjoy!

The Heat Continues..

Summer is definately here! Whoa it is stinking hot! The sun has been simply brutal.  It has been at or above 100 degrees here in Indiana for about a week now.  So in efforts to stay cool some of my family and friends ventured to Barkley Lake to relax and cool off a bit!  I wish Mom and Dad could have stayed longer:( Anywho my days began with small morning runs and ended laying on a massive float on the lake.  I have another fun family packed weekend coming up to celebrate Independence Day:) Speaking of which I hope everyone had a great July 4th!  We may be celebrating a little late but the American spirit will be strong!  Happy birthday America! So what are you doing to keep cool?
