13.1!

This Saturday I am running in the Derby Half Marathon in Louisville, KY.  I love running in organized races because I am surrounded by other running fools!  There is something strange about thousands of people running and running and running.  Strange yet wonderful because most of the time races raise money for a good cause.  The test of personal will power and endurance is something that simply must be experienced because me trying to explain the roller coaster of emotions I roll through in a long race is pointless.  The feeling of crossing the finish line after the struggle is simply wonderful.  Who knows my next post may be me reliving the entire race, haha. I'm super excited because Johnny is going to cheer me on, this will be the first time he has ever watched me run :) Well I'm pretty much packed and ready to go! Wish me luck!!



My friend Kelly, who I mentioned in my prior post, posted a homemade protein bar recipe on her fan page so I made a few adjustments and made some of my own!
You will need:
2 1/2 cups old fash­ioned oats
1 scoop Beach­body Choco­late pro­tein pow­der (I used a choc protein mix I already had)
2 TBSP Nat­u­rally More peanut but­ter
3 large egg whites
2 medium bananas, mashed
1 TBSP honey
7 TBSP almond milk (I used light choc soy milk)
1 tsp cinnamon
Instruc­tions:
Pre­heat your oven for 5 min­utes at 350.
Mix the oats, the whey and the cinnamon.
Add the peanut but­ter and stir in thoroughly.
Add the egg whites, mashed bananas and the honey.
Add the almond milk slowly, while mix­ing thoroughly.
Spoon the mix­ture into a greased lined cake tin and level with a knife.
Place in oven and bake for 15 min­utes. Remove from oven and allow to cool slightly before cut­ting to reduce stickiness.
Cut into 8 bars.
Nutri­tional Info: Calo­ries: 154 Pro­tein: 10g; Car­bo­hy­drates: 21g Fat: 4g


I put 1/2 in the freezer for future use! Another tip, spray your knife with cooking spray to prevent sticking!!

Here Comes Peter Cotton Tail

Happy Easter friends and family!! I hope everyone has had a good one. Despite being on 24 hour call today and already going in twice mine has been pretty nice :) Since I knew I was going to be on call today my family and I pretty much did Easter festivities yesterday.  Because my grandparents live next door to my parents I am lucky enough to get to see my extended family for most of the holidays through the year with only a 5 minute drive!  I've always been super close to my cousins and love getting to see them! So I got to spend a little time with a few of them yesterday afternoon which made the entire weekend great.  Nathan and Tara were both off yesterday so I got my much needed sibling time as well :) I hope you got to spend some time with family and friends too!! O yeah and I hope the Easter bunny came to visit you..yes he visits me and yes I am 27 years old but that is what makes holidays so special.  The little things are what counts, to know that someone thought of me and wanted to make my day better! If you are like me chocolate will always brighten the day in the best kind of way. O yeah and we still dye Easter eggs...

Sweet Lovies from even Sweeter Girlies

I have recieved so many lovely things from my wonderful friends lately.  Sharing interested with people and being able to thrive and bounce ideas off of each other is so fun for me:)  I have some really talented and knowledgeable friends!
My friend Kelly has recently became a Team Beachbody Coach (how awesome). Beachbody is where p90x and insanity reign from, which are both great workouts!!If you know me you know I love anything dealing with fitness or nutrition and she is super knowledgeable about both. Check out her page! www.shakeology.com/KellyForbes She has recently introduced me to super healthy smoothies shakeology and powdered peanut butter that is only 45 calories per 2 Tbsp (compared to 190cal in regular pb).

The first flavor shakeology I tried was greenberry, I had it for breakfast and I was full all morning :) I just added 1 cup ice, 8 oz skim milk, 1 pack of light and fit vanilla yogurt and 1 shakeology sample.

Super healthy and super tasty!

She even gave me this nifty cup! Another thing I would like to rave about is my ninja mixer!! Wonderful product and would suggest it to anyone!

After my long run tomorrow I plan on treating myself to Chocolate cake batter shakeology, courtesy of miss Kelly once again :)

So when I got home from work today I had a lovely little package waiting on me from my new friend Caiti Schuler!  I had the pleasure of meeting her just a few months ago but we hit it off from the start! 6 months :)

Johnny and I have been married for 6 months! I can't believe it's already been half of a year, seems like yesterday I was walking down the aisle towards my best friend to say I do. We have been together for almost 10 years but we are still newlyweds so I thought it would be fun to spend the weekend together in celebration of being married!  The celebration started on Friday night, we rented movies, had Chinese takeout and choc chip cookies such a perfect night :) Saturday started off with his and hers coffee mugs and breakfast.  We spent the day browsing through antique shops in Beaver Dam, KY. When we got home we made chili together and spent so QT together.  I love my Johnny and love weekends like these. I hope you had a good weekend too!

Didn't have chili seasoning packet so we used taco seasoning instead.  Also used ground turkey sausage instead of ground beef.  Turned out pretty dang tasty!

Sister Adventure

Since I've started working in surgery about 7 months ago I haven't had a weekday off until this past Thursday.  So I decided to journey to Murray to spend the day with my seester Tara.  Anytime we have an entire day devoted just to US we call it a sister adventure.  Our most recent sister adventure consisted of coffee drinks, thrifting, sushi, and a photo shoot.  These are some of our favorite things so needless to say the day was wonderful :) The weather was beautiful and the day was wide open with no schedule.  While thrifting I found all types of goodies!  Most of the things I bought will help me create all types of crafty goodies! I got vintage buttons, lace, embroidery hoops, sweet stationary and more! I love my sister and I loved this day :)

I love how cozy Tara's little apartment is.  It's kind of trip to go there because Johnny lived in these same apartments for a couple of years, it looked very different..haha.

Whoop whoop!

Our March of Dimes bake sale raised $539 last week!! Whoop whoop!  I was unable to work the bake sale because I had to work but I made a few goodies and I wanna share one with you.  An classic treat with an amazing taste :) A Whoopie Pie! You may be saying what the heck is a whoopie pie?? I bet if you ask your grandparents they would know :)






Homemade Whoopie Pie

Ingredients:
cakes:
1 box devil's food cake mix
3 large eggs
1/2 c veg oil
1/2 t baking powder

filling:
1/2 cup Crisco
1T water
2 c powdered sugar
1/2 t vanilla

1. preheat oven 350. covered cookie sheet with parchment paper
2. Cakes. Combine the cake ingredients and mix on low for 30 sec, then on medium for 2 min. Drop by heaping spoonfuls onto baking sheet (app 36)
3. Bake for 12 min, rotate baking sheet halfway through.
4. While cakes cool make the filling.  Beat water and Crisco until combined, add powdered sugar and vanilla, beat on medium-high until smooth.  Spread filling onto one cake and top with another.

Recent Crafties

Since the Craft Show a couple of weeks ago my inspiration has been in hyper drive.  I find myself at work thinking of what I can make next when I get home. I think my ruining routine is still suffering a bit because of my joy for crafting but I'm OK with that :)  after all I rejoined the YMCA this week in hopes of getting summer ready! So that is a step in the right direction in my book. Having my own little sewing space has made it so easy to come home and start creating, instead of taking 15 minutes dragging things from rooms and closets to get started.  Headbands are sort of what I hooked on right now :) Check out my recent crafties!!
